Beef burger
patty recipes.

A good burger starts with a solid base, then you can take it wherever you want from there.

Choose your base burger first, then add one of the flavour ideas below to build your own version.

Time is a guide, temperature is the target.

Choose your base.

Classic beef burger

Makes 4 to 5 patties

Ingredients

  • 600 g quality beef mince, ideally a chuck and brisket blend with 20 to 25% fat
  • Sea salt
  • Cracked black pepper, about 5 good twists from a grinder

Method

  1. Divide the mince into 4 to 5 equal portions.
  2. Gently shape into patties without overworking the meat.
  3. Chill for 20 to 30 minutes if needed.
  4. Season the outside with sea salt and cracked black pepper just before cooking.
  5. Cook over a hot barbecue, plancha or cast-iron pan until you have a good crust and the burger is cooked through.
  6. Rest briefly before serving.

Bone marrow burger

Makes 4 patties

Ingredients

  • 600 g chuck and brisket mince, ideally 20 to 25% fat
  • 60 to 80 g raw bone marrow, very cold and finely chopped
  • Cracked black pepper
  • Sea salt for the outside just before cooking

Method

  1. Keep the bone marrow cold and chop it into small pieces.
  2. Gently fold it through the mince with the cracked black pepper.
  3. Divide into 4 equal portions and shape into patties.
  4. Chill for 20 to 30 minutes.
  5. Season the outside with salt just before cooking.
  6. Cook over a hot barbecue, plancha or cast-iron pan until cooked through.
  7. Rest briefly before serving.

Hand-chopped ribeye burger

Makes 4 patties

Ingredients

  • 600 g ribeye steak
  • Sea salt
  • Cracked black pepper

Method

  1. Put the ribeye in the freezer for 20 to 30 minutes so it firms up but does not freeze solid.
  2. Cut the steak into strips, then into small pieces.
  3. Keep chopping with a sharp knife until you have a coarse mince texture.
  4. Do not turn it into a paste.
  5. Keep the natural ribeye fat mixed through the meat.
  6. Divide into 4 equal portions and gently shape into patties.
  7. Chill for 20 to 30 minutes.
  8. Season the outside with sea salt and cracked black pepper just before cooking.
  9. Cook over a hot barbecue, plancha or cast-iron pan until cooked through.
  10. Rest briefly before serving.
British Griller Tip

Keep everything cold while chopping and forming the burgers. Cold fat stays in small pieces and renders through the burger as it cooks.

Short rib burger

Makes 4 patties

Ingredients

  • 600 g boneless beef short rib, coarsely minced or finely chopped
  • Sea salt
  • Cracked black pepper

Method

  1. Keep the beef very cold.
  2. Mince or finely chop the short rib, keeping enough natural fat for a juicy burger.
  3. Divide into 4 equal portions and shape into patties.
  4. Chill for 20 to 30 minutes.
  5. Season the outside with sea salt and cracked black pepper just before cooking.
  6. Cook over a hot barbecue, plancha or cast-iron pan until cooked through.
  7. Rest briefly before serving.

Add your flavour.

Each flavour mix below is designed for approximately 600 g of burger meat and can be added to any of the base patties above.

With richer bases such as Bone Marrow, use slightly less of fatty additions such as butter, cheese or black pudding.

01 / FLAVOUR MIX

Black pudding

  • 80 g black pudding, finely crumbled
  • 1/2 tsp cracked black pepper

Gently fold through the burger mix.

02 / FLAVOUR MIX

Bacon and onion

  • 60 g smoked streaky bacon, cooked and finely chopped
  • 50 g caramelised onion, cooled and well drained
  • Cracked black pepper

Fold through once completely cool.

03 / FLAVOUR MIX

Steakhouse pepper

  • 1 1/2 tsp coarsely cracked black pepper
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic granules

A simple, punchy steakhouse-style burger.

04 / FLAVOUR MIX

Blue cheese

  • 60 to 70 g Stilton or another firm blue cheese, crumbled
  • 1/2 tsp cracked black pepper

Keep the cheese cold and gently fold through.

05 / FLAVOUR MIX

Jalapeño and Cheddar

  • 60 g mature Cheddar, finely diced
  • 30 g jalapeños, finely chopped and drained
  • 1/2 tsp cracked black pepper

Keep the cheese cold so small pockets remain through the burger.

06 / FLAVOUR MIX

Mushroom and umami

  • 75 g mushrooms, very finely chopped
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic granules
  • Cracked black pepper

Cook the mushrooms first until most of their moisture has evaporated.

Cool completely before mixing through the burger meat.

07 / FLAVOUR MIX

Chilli and smoked paprika

  • 1 fresh red chilli, finely chopped
  • 1 tsp smoked paprika
  • 1/2 tsp garlic granules
  • 1/2 tsp chilli flakes, optional

Adjust the chilli depending on how much heat you want.

08 / FLAVOUR MIX

Horseradish and black pepper

  • 1 tbsp horseradish sauce
  • 1 tsp cracked black pepper

Particularly good with ribeye or short rib.

09 / FLAVOUR MIX

Mustard and black pepper

  • 1 tbsp Dijon mustard or wholegrain mustard
  • 1 tsp cracked black pepper

Keep it simple and let the beef, mustard and pepper do the work.

10 / FLAVOUR MIX

Garlic butter

  • 50 g butter
  • 1 large garlic clove, finely grated
  • 1 tbsp finely chopped parsley
  • Cracked black pepper

Mix the garlic and parsley into the butter.

Chill until firm, then chop into small pieces and fold through the burger mix.

If using the bone marrow base, reduce the garlic butter to around 30 g.

11 / FLAVOUR MIX

Black garlic

  • 2 to 3 black garlic cloves
  • 1/2 tsp cracked black pepper
  • 1/2 tsp Worcestershire sauce

Mash the black garlic into a paste and gently mix through.

12 / FLAVOUR MIX

Truffle burger

Use either:

  • 20 to 25 g truffle butter
  • 1 to 2 tsp truffle paste

Plus:

  • Cracked black pepper

Use truffle carefully so it supports the beef rather than overpowering it.

If using truffle butter, chill it first and chop it into small pieces.

13 / FLAVOUR MIX

French onion

  • 75 g caramelised onions, cooled and well drained
  • 1/2 tsp dried thyme or 1 tsp fresh thyme
  • 1 tsp Worcestershire sauce
  • Cracked black pepper

Make sure the onions are not wet or the burger can become too soft.

14 / FLAVOUR MIX

Cajun burger

  • 1 1/2 tsp Cajun seasoning
  • 1/2 tsp garlic granules
  • 1/2 tsp smoked paprika
  • Cracked black pepper

Check how salty the Cajun seasoning is before adding extra salt to the outside.

15 / FLAVOUR MIX

Korean-style burger

  • 1 tbsp gochujang
  • 1 tsp finely grated fresh ginger
  • 1 garlic clove, finely grated
  • 1 spring onion, very finely sliced

Gently combine with the burger meat.

Because gochujang is already strongly seasoned, go easy with additional salt.

16 / FLAVOUR MIX

Harissa burger

  • 1 tbsp harissa paste
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • Cracked black pepper

A warm, smoky North African-style burger.

03 / THE CHEESE-FILLED OPTION

Make any burger
a Juicy Lucy.

Any of the burgers above can be turned into a Juicy Lucy.

  1. Split each burger portion into two thinner patties.
  2. Put 20 to 25 g of cheese in the middle.
  3. Place the second piece of meat on top and completely seal the edges.
  4. Chill before cooking to help the burger hold its shape.
  5. Cook through, checking the meat around the filling with a thermometer.

Good cheeses

  • Mature Cheddar
  • Red Leicester
  • Monterey Jack
  • Mozzarella
  • Stilton
Mind the hot centre.

The melted cheese inside can be extremely hot when the burger is first cut open.

Burger tips.

  • Keep the meat cold
  • Do not overwork the burger mix
  • Salt the outside just before cooking rather than mixing salt through the raw meat
  • Chill patties before cooking if they feel soft
  • Keep wet ingredients controlled so the burgers hold their shape
  • Use a thermometer to check doneness
